Heat a medium saucepan on medium-low and add apples, lemon juice, water, sugar, cinnamon, nutmeg, salt, and cornstarch. Stir to combine.

Simmer the mixture while stirring occasionally. Cook until apples are slightly soft and the sauce thickens, approximately 10 minutes. Remove from heat and let cool for 10 minutes.

Line a baking sheet with parchment paper. Roll out the pie crust and cut into 4.5-inch circles using a circle cutter. Place circles on the baking sheet.

Place 2 tablespoons of apple filling onto the bottom half of each circle. Fold the top half over and press edges together with a fork. Make three small slits on the top with a knife.

Mix egg and water to create an egg wash. Brush it over the top of each pie and sprinkle with coarse sugar.

Preheat the air fryer to 350°F (175°C) for 5 minutes.

Place 2-5 hand pies in the air fryer basket without overcrowding. Cook at 350°F (175°C) for 8-10 minutes.
