In a large bowl, combine the beef chunks with all marinade ingredients (olive oil, minced garlic, lemon juice, chili powder, cumin, salt and pepper). Mix until the meat is fully coated. Cover and marinate in the refrigerator for at least 30 minutes or up to 24 hours for more flavor.

When ready to cook, preheat your air fryer to 400°F. While it's heating, cut the bell pepper and red onion into 1-inch pieces. Thread the marinated beef, bell pepper pieces, and onion chunks onto skewers, alternating between meat and vegetables.

Place the prepared skewers into the preheated air fryer basket, making sure they fit properly. Air fry for 8-10 minutes, turning the skewers halfway through cooking time, until the beef is nicely charred on the outside and tender on the inside.
