Pour boiling water over the almonds and soak for 10 minutes until the skins loosen.

Place almonds in a kitchen towel and rub to remove the skins. Peel any remaining almonds by hand.

Roast at 350°F (180°C) or 320°F (160°C) fan/convection for 8-10 minutes until they start to sweat but don't darken.

Once cooled, blend the almonds with salt and optional vanilla until desired consistency is reached. Take breaks during blending to prevent overheating.
