Homemade almond butter (Print Version)

# Ingredients:

01 - 14 oz (400g) almonds (unpeeled)
02 - Pinch of salt

→ Optional

03 - Ground vanilla bean
04 - Neutral vegetable oil

# Instructions:

01 - Pour boiling water over the almonds and soak for 10 minutes until the skins loosen.
02 - Place almonds in a kitchen towel and rub to remove the skins. Peel any remaining almonds by hand.
03 - Roast at 350°F (180°C) or 320°F (160°C) fan/convection for 8-10 minutes until they start to sweat but don't darken.
04 - Once cooled, blend the almonds with salt and optional vanilla until desired consistency is reached. Take breaks during blending to prevent overheating.

# Notes:

01 - Yields approximately 1 2/3 cups (400ml) of almond butter. The almonds should not darken during roasting.
