Cut the vegetables into chunky pieces. Halve the cucumber lengthwise, then slice into thick half-moons. Halve the tomatoes, remove the core, quarter them and then cut into large chunks. Remove the seeds and core from the bell pepper and dice into rough chunks. Peel the red onion, cut in half, and slice into half rings. Cut the feta cheese into large cubes.

Place all the prepared vegetables in a large salad bowl. Scatter the feta cubes on top and sprinkle with dried oregano so it adheres to the cheese. Add olives if desired.

Squeeze the juice from half a lemon and whisk 2 tablespoons of it with the oil, salt, and pepper to make a dressing. Pour the dressing over the salad, gently toss everything together, and serve immediately.
