# Ingredients:

→ Salad Ingredients

01 - 1/2 cucumber
02 - 2 vine tomatoes (about 9 oz/250g)
03 - 1 bell pepper (any color)
04 - 1 red onion
05 - 7 oz (200g) feta cheese
06 - Olives (optional)

→ Dressing

07 - 2 teaspoons dried oregano
08 - 3 tablespoons oil (olive or canola)
09 - 2 tablespoons freshly squeezed lemon juice (about 1/2 lemon)
10 - Salt and freshly ground pepper

# Instructions:

01 - Cut the vegetables into chunky pieces. Halve the cucumber lengthwise, then slice into thick half-moons. Halve the tomatoes, remove the core, quarter them and then cut into large chunks. Remove the seeds and core from the bell pepper and dice into rough chunks. Peel the red onion, cut in half, and slice into half rings. Cut the feta cheese into large cubes.
02 - Place all the prepared vegetables in a large salad bowl. Scatter the feta cubes on top and sprinkle with dried oregano so it adheres to the cheese. Add olives if desired.
03 - Squeeze the juice from half a lemon and whisk 2 tablespoons of it with the oil, salt, and pepper to make a dressing. Pour the dressing over the salad, gently toss everything together, and serve immediately.

# Notes:

01 - This salad is best enjoyed freshly made and doesn't need time to marinate.
02 - You can optionally add olives and pepperoncini peppers to the salad for extra flavor.
03 - As a side dish, this salad serves 4 people; as a main course, it serves 2.
04 - Delicious accompaniments include grilled meats, flatbread, and a light garlic sauce.
