# Ingredients:

01 - 600 grams cod fillets
02 - Salt to taste
03 - Black pepper to taste

04 - 2 tablespoons olive oil
05 - 1 medium onion, thinly sliced
06 - 1 tablespoon grated fresh ginger
07 - 2 garlic cloves, crushed
08 - 300 milliliters coconut milk
09 - 1 large lemon, juice and zest

# Instructions:

01 - Preheat your oven to 180°C (350°F) to ensure it is ready for baking the cod.
02 - Season the cod fillets evenly with salt and black pepper to taste.
03 - In a large skillet over medium heat, warm the olive oil. Sauté the sliced onion until translucent. Stir in fresh ginger and crushed garlic, cooking until fragrant. Add the coconut milk and bring the mixture to a gentle simmer. Mix in the lemon zest and juice, ensuring the flavors combine.
04 - Arrange the seasoned cod fillets in a single layer within a baking dish. Pour the coconut-lemon cream sauce over the fillets. Place the dish in the preheated oven and bake for 20-25 minutes, or until the cod flakes easily with a fork.
