01 - 3 ripe bananas (the spottier the better)
02 - 2 cups (200g) quick-cooking or old-fashioned rolled oats

# Instructions:

01 - Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. In a medium bowl, thoroughly mash the ripe bananas with a fork until smooth and no large chunks remain. Add the oats to the mashed bananas and mix until well combined. The mixture will be sticky and somewhat wet.
02 - Using a tablespoon or cookie scoop, drop 2-tablespoon portions of the mixture onto the prepared baking sheet, spacing them about 2 inches apart. With damp fingers or the back of a spoon, gently flatten each cookie into a round shape about 1/4-inch thick. Bake in the preheated oven for 18-20 minutes, until the edges are golden brown and the cookies feel set when lightly touched. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
