Melty Blackberry Jalapeno Chicken (Print Version)

# Ingredients:

→ Chicken

01 - 4 boneless, skinless chicken breasts
02 - 1 tablespoon olive oil
03 - ½ teaspoon salt
04 - ½ teaspoon black pepper
05 - ½ teaspoon garlic powder
06 - ½ teaspoon smoked paprika

→ Filling

07 - 1 cup fresh blackberries, roughly chopped
08 - 1 small jalapeno, finely diced (remove seeds for less heat)
09 - 4 ounces cream cheese, softened
10 - ½ cup shredded mozzarella
11 - 1 tablespoon honey
12 - Pinch of salt

→ Topping (Optional)

13 - Extra blackberries for garnish
14 - Chopped fresh cilantro or parsley

# Instructions:

01 - Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil or cooking spray.
02 - In a small bowl, combine chopped blackberries, diced jalapeno, cream cheese, shredded mozzarella, honey, and a pinch of salt. Mix well until creamy and evenly blended.
03 - Using a sharp knife, carefully cut a pocket into the side of each chicken breast (don’t cut all the way through). Spoon the blackberry-jalapeno mixture into each pocket, using toothpicks or kitchen twine to secure the opening if needed. Season the outside of the stuffed chicken breasts with salt, pepper, garlic powder, and smoked paprika.
04 - Heat 1 tablespoon olive oil in a skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes per side until golden brown. Transfer to the prepared baking dish.
05 - Place the baking dish in the preheated oven. Bake for 20-25 minutes, or until the chicken is fully cooked (internal temperature 165°F/74°C) and the filling is bubbly.
06 - Let the chicken rest for 5 minutes before serving. Garnish with extra blackberries and fresh herbs like cilantro or parsley for a burst of color and freshness. Slice and serve with your favorite sides.
