Breakfast Fruit Yogurt Bake (Print Version)

# Ingredients:

01 - 2 cups plain Greek yogurt
02 - 4 large eggs
03 - 1/4 cup raw honey or pure maple syrup
04 - 1/2 cup oat flour or ground oats
05 - 1 teaspoon vanilla extract
06 - 1 cup mixed fresh berries

# Instructions:

01 - Preheat your oven to 350°F and lightly spray or brush an 8×8-inch baking dish with coconut oil cooking spray.
02 - In a large mixing bowl, add the yogurt, eggs, honey, oat flour, and vanilla. Whisk until smooth.
03 - Gently fold in the fresh berries.
04 - Transfer the batter to your prepared baking dish.
05 - Optionally, add a few extra berries on top of the batter.
06 - Bake in the preheated oven for 35-40 minutes, or until fully set in the center.
07 - Remove from the oven and allow to completely cool before slicing.
08 - Serve slices with extra yogurt, honey, and fruit as desired.
09 - Wrap leftovers tightly in plastic wrap and store in the refrigerator for up to 3 days.
