Brown Sugar Grilled Pineapple (Print Version)

# Ingredients:

01 - 1 fresh pineapple, peeled, cored, and cut into 8 spears
02 - 1/4 cup light brown sugar
03 - 1/4 teaspoon cayenne pepper
04 - 1 teaspoon vanilla extract
05 - 1/8 teaspoon kosher salt
06 - Vegetable oil spray, for the grill

# Instructions:

01 - Place the pineapple in a large mixing bowl and sprinkle with the brown sugar, cayenne, vanilla extract, and salt. Toss to combine.
02 - Cover the pineapple with plastic wrap and let it marinate for 30 minutes at room temperature or overnight in the refrigerator. Reserve the liquid marinade.
03 - Preheat your grill pan over high heat. Spray with vegetable oil spray just before adding the pineapple.
04 - Grill the pineapple for 1 to 2 minutes on each side.
05 - Place the excess marinade liquid in a microwave-safe bowl and heat for 90 seconds or until bubbly and syrupy. Set aside.
06 - Remove the grilled pineapple to a serving platter and drizzle with the prepared marinade syrup before serving.

# Notes:

01 - You can buy a pre-peeled and cored whole ripe pineapple to reduce prep time significantly.
02 - Cut the pineapple into rings instead of spears if preferred, but avoid cutting slices too thinly to maintain integrity when grilling.
03 - For outdoor grills, use grill plates if the grates are too wide for the pineapple spears.
