Buffalo Chicken Bites Dish (Print Version)

# Ingredients:

01 - 2 lbs boneless skinless chicken breasts, cut into 1-inch pieces
02 - ¾ cup all-purpose flour
03 - 2 large eggs
04 - 4 cups panko bread crumbs
05 - 1 tsp garlic powder
06 - 1 tsp kosher salt
07 - Cracked black pepper
08 - ½ tsp cayenne pepper
09 - ½ tsp paprika
10 - 2 tbsp olive oil

11 - 1 ½ cups buffalo wing sauce
12 - 1 cup blue cheese dressing
13 - ¼ cup blue cheese crumbles
14 - Celery sticks (for serving)
15 - Carrot sticks (for serving)

# Instructions:

01 - Preheat the oven to 400°F. Line a large baking sheet with parchment paper and set a baking rack on top.
02 - In a medium bowl, mix together chicken breast pieces and all-purpose flour until well coated.
03 - In a separate medium bowl, whisk together eggs. In another large bowl, mix together panko bread crumbs, garlic powder, kosher salt, cracked black pepper, cayenne pepper, and paprika.
04 - Coat each piece of chicken in the egg mixture, then dip into the panko bread mixture, pressing the coating onto the chicken. Place chicken bites onto the baking rack and drizzle with olive oil.
05 - Bake for 12 minutes. Turn each chicken piece after the first 12 minutes to ensure even browning. Bake an additional 12-15 minutes or until the chicken reaches an internal temperature of 165°F and is golden brown.
06 - Let the chicken pieces cool slightly, then toss them in buffalo sauce until well coated. Serve with blue cheese dressing topped with blue cheese crumbles, alongside celery and carrot sticks.

01 - For optimal coating, press the panko mixture firmly onto the chicken pieces.
02 - Bakery-fresh panko crumbs will yield a crispier texture.
