Use leftover rice from yesterday, or let fresh-cooked rice cool before using.

Dice the carrots and peppers. Slice the green onions into thin rings.

Heat oil in a pan. Cook the carrots, peas, and peppers for 3-5 minutes.

Mix in paprika and turmeric, then toss in the rice and stir it all together.

Make a hole in the rice’s center, crack the eggs into it, scramble, and mix everything up.

Pour soy sauce over and stir for 2 more minutes. Garnish with green onions and serve.
