Preheat the oven to 350°F. Line a 9x13-inch baking pan with parchment paper or spray with nonstick baking spray. Set aside. In a bowl, sift together 2 1/2 cups all-purpose flour, 2/3 cup powdered sugar, and 1/2 teaspoon salt. Add 12 tablespoons melted unsalted butter and mix until combined. Press the dough into the prepared pan in an even layer using the bottom of a measuring cup. Bake for about 20 minutes until the edges are light golden.

In a food processor or stand mixer, combine 3 cups granulated sugar and 3 tablespoons lime zest. Mix until the zest is evenly distributed. Add the remaining 1/2 cup flour and mix again. Add 1 cup fresh lime juice, 8 large eggs, and 6 drops green food coloring (if using). Mix until fully combined. Pour the lime filling over the baked crust.

Bake the bars for 30-40 minutes, rotating the pan halfway through. Check for doneness by gently wiggling the pan; the filling should not jiggle in the center. Avoid overbaking.

Remove from the oven and allow to cool for 1 hour. Transfer to the refrigerator and chill for at least 2 additional hours.

Dust the top of the lime bars with 1/4 cup powdered sugar, sprinkle with extra lime zest if desired, and cut into 16 even bars. Serve and enjoy.
