Cabbage Roll Soup Dinner (Print Version)

# Ingredients:

01 - 2 teaspoons vegetable oil
02 - 1 pound lean ground beef
03 - Salt and pepper to taste
04 - 1 medium yellow onion, diced finely
05 - 2 cloves garlic, minced
06 - 4 cups chopped green cabbage
07 - 2 medium carrots, quartered and sliced
08 - 4 cups low-sodium beef broth
09 - 3 cans (8 ounces each) tomato sauce
10 - 1/2 cup uncooked white rice
11 - 1 bay leaf
12 - 3 tablespoons light brown sugar
13 - 2 tablespoons fresh chopped parsley

# Instructions:

01 - In a Dutch oven or large soup pot, heat oil over medium-high heat and add ground beef.
02 - Season ground beef with salt and pepper as desired and cook until browned.
03 - Add diced onion and minced garlic and cook for another 2-3 minutes, until onions are tender.
04 - Add in chopped cabbage, carrots, tomato sauce, beef broth, white rice, bay leaf, and brown sugar and stir to combine.
05 - Bring soup to a simmer and let cook for about 25 minutes, until rice is tender.
06 - Take out the bay leaf and sprinkle with chopped parsley before serving.
