Caramelized Onions and Mushrooms (Print Version)

01 - 4 tbsp unsalted butter
02 - 2 tbsp olive oil
03 - 6 cloves garlic, minced
04 - 16 oz mushrooms, sliced (mixture of baby Bella and shiitake)
05 - 4 medium yellow onions, thinly sliced
06 - 2 tsp kosher salt, to taste
07 - 2 tsp fresh thyme (or 1 tsp dried)
08 - ½ tsp coarse black pepper, to taste
09 - 1 tbsp honey, to taste
10 - 2 tbsp Worcestershire sauce
11 - 2 tbsp balsamic vinegar
12 - 4 oz chicken broth (or substitute with white wine, beef, or vegetable broth)

# Instructions:

01 - Add butter and olive oil to a Dutch oven over low heat. Once melted, add garlic and sauté until fragrant, about 1 minute.
02 - Increase heat to medium and add onions and mushrooms. Cook untouched for about 5 minutes to allow them to start breaking down.
03 - Season with salt, pepper, and thyme. Increase heat to medium-high, then add Worcestershire sauce, honey, balsamic vinegar, and chicken broth. Toss to combine and stir every 5 minutes until mushrooms and onions are caramelized with no excess liquid—about 45-50 minutes.
04 - Transfer to an airtight container and store in the refrigerator for up to 5 days.
