01 - 3/4 cup (100g) ground almonds
02 - 1/2 cup (80g) dates, pitted
03 - 2 cups (200g) carrots
04 - 1 1/2 cups (120g) quick-cooking oats
05 - Shredded coconut for coating

# Instructions:

01 - Peel the carrots and finely grate them.
02 - Place the pitted dates and ground almonds in a food processor and blend until you have a uniform mixture.
03 - Fold the grated carrots and quick-cooking oats into the date-almond mixture and combine thoroughly.
04 - Allow the mixture to rest for about 10 minutes so the oats can absorb some moisture.
05 - Shape the mixture into 17 small balls, then roll each one in shredded coconut until completely coated.
06 - Store the finished energy balls in the refrigerator. They taste best when slightly chilled.
