01 - 2 cups corn
02 - 1/4 cup cornmeal
03 - 1/4 cup all-purpose flour
04 - 1 teaspoon smoked paprika
05 - 1 egg
06 - 1 green onion, chopped
07 - 1/2 cup grated parmesan or cheese of choice
08 - 1 handful cilantro, chopped
09 - 1 tablespoon lime juice
10 - Salt to taste
11 - Fresh cracked pepper to taste
12 - 1 tablespoon oil
13 - Sour cream or heavy cream, for garnish

# Instructions:

01 - Combine corn, cornmeal, flour, smoked paprika, egg, grated cheese, green onion, chopped cilantro, lime juice, salt, and pepper in a large mixing bowl. Mix thoroughly, adding water if needed to form a cohesive mixture.
02 - Heat 1 tablespoon of oil in a skillet over medium heat. Spoon the corn mixture into the pan, forming patties. Cook until golden brown on each side, approximately 4 minutes per side.
03 - Top the fritters with a dollop of sour cream or heavy cream as garnish before serving. Enjoy!
