Season chicken breasts evenly with salt, pepper, and smoked paprika if using.

Heat olive oil or butter in a large skillet over medium-high heat. Cook chicken breasts for 4-5 minutes on each side until golden brown. Remove and set aside.

Reduce heat to medium. Add chicken broth to the skillet and scrape up any browned bits. Stir in heavy cream and Boursin cheese, cooking until cheese melts and sauce is smooth.

Return chicken to the skillet and simmer in the sauce for 8-10 minutes until fully cooked (165°F internal temperature).

Garnish with fresh chopped parsley and serve warm over pasta, rice, or with roasted vegetables.
