Whoopie Pies with Vanilla Cream (Print Version)

# Ingredients:

→ For the cake shells

01 - 100ml milk
02 - 120g butter, softened to room temperature
03 - 100g granulated sugar
04 - A pinch of salt
05 - 2 medium eggs, at room temperature
06 - 220g all-purpose flour
07 - 2 tablespoons unsweetened cocoa powder
08 - 3 teaspoons baking powder

→ For the vanilla cream filling

09 - 200g double-cream cream cheese (or mascarpone)
10 - 1 vanilla bean, seeds scraped
11 - 130g butter, softened
12 - 150g powdered sugar, sifted

# Instructions:

01 - Line baking sheets with parchment paper. Preheat the oven to 350°F (180°C) or 320°F (160°C) with fan. In a large bowl, beat the softened butter with sugar and salt until light and fluffy. Gradually add the eggs one at a time, continuing to beat between additions. In a separate bowl, whisk together flour, cocoa powder, and baking powder. Alternately fold in the dry ingredients and milk into the butter mixture, beginning and ending with the dry ingredients.
02 - Transfer the chocolate batter to a piping bag fitted with a large round tip (approximately 12mm/½ inch). Pipe evenly sized mounds (about 2½-3 inches/6-7cm in diameter) onto the prepared baking sheets, leaving space between each for spreading. Bake in the preheated oven for 13 minutes until slightly springy to the touch. Allow to cool completely on a wire rack.
03 - Place the cream cheese in a mixing bowl. Split the vanilla bean lengthwise and scrape out the seeds with the back of a knife. Add the vanilla seeds and softened butter (cut into pieces) to the cream cheese. Beat for at least 2 minutes until light and fluffy.
04 - Add the sifted powdered sugar to the cream mixture and continue beating until smooth and well combined. Transfer to a piping bag and pipe a generous amount of filling onto the flat side of half the cake shells. Top with the remaining shells, flat side down, gently pressing to create sandwiches. Refrigerate until ready to serve.
