Coconut Key Lime Smoothie (Print Version)

# Ingredients:

01 - 1 large frozen ripe banana, sliced
02 - Zest from 1 small lime or key lime
03 - 2 tablespoons fresh lime or key lime juice
04 - ½ cup vanilla or coconut Greek yogurt (use coconut-based yogurt to keep it dairy-free)
05 - ½ cup light coconut milk or milk of choice
06 - ½ cup fresh spinach
07 - ½ teaspoon vanilla extract
08 - 1-2 teaspoons maple syrup or honey (optional, to sweeten if necessary)

→ Optional Garnishes

09 - Extra lime wedge, for rimming glass
10 - Graham cracker crumbs
11 - Whipped cream
12 - Shredded toasted coconut

# Instructions:

01 - Add crushed graham crackers to a small plate. Use a lime wedge to wet the rim of the glass, then dip the rim in the graham cracker crumbs, rolling from side to side until well coated.
02 - Add all ingredients to a high-powered blender: frozen banana, lime zest, lime juice, vanilla yogurt, milk, spinach, and vanilla extract. Blend until smooth, adding more milk to thin if necessary.
03 - Taste the smoothie and add sweetener if needed, depending on the sweetness of the yogurt used.
04 - Pour the smoothie into the prepared glass. Top with whipped cream and shredded toasted coconut if desired.

# Notes:

01 - To keep this smoothie vegan or dairy-free, use a coconut-based yogurt or a vanilla dairy-free yogurt.
02 - Feel free to add up to 2 cups of spinach if desired. This recipe uses it mainly for color.
