Creamy Spicy Cajun Chicken Pasta (Printer-Friendly Version)

# What You'll Need:

→ For the Chicken

01 - 2 tablespoons olive oil
02 - 3 tablespoons Cajun spice, divided
03 - 300g (2⁄3 lb) boneless, skinless chicken breast or thighs

→ For the Sauce

04 - 3 cloves garlic, minced
05 - 1 brown onion, diced
06 - 400g (14 oz) tin chopped tomatoes
07 - 150-200ml (3⁄4 cups) single cream
08 - Juice of 1 lemon

→ Additional Ingredients

09 - 300g (2⁄3 lb) penne pasta
10 - 1⁄2 bunch fresh coriander (cilantro), chopped
11 - 25g (1⁄4 cup) grated parmesan cheese

# Let's Cook!:

01 - Cut chicken into 2.5cm cubes and mix with 2 tablespoons of Cajun spice
02 - Heat oil in a large skillet, cook the seasoned chicken until golden and done. Set aside
03 - In the same pan, cook garlic and onion until soft and fragrant
04 - Add tomatoes and remaining Cajun spice. Simmer for 5 minutes, then stir in cream and lemon juice
05 - Return chicken to pan. Add cooked pasta and stir well to coat with sauce
06 - Mix in fresh coriander and serve topped with parmesan cheese

# Recipe Notes:

01 - Use cream cheese instead of cream for a richer sauce
02 - Fresh pasta only needs 4 minutes cooking in the sauce
