Heat oven to 400°F (200°C). Line baking sheet with parchment. Toss halved potatoes with oil, salt and pepper.

Spread potatoes on baking sheet. Roast 25-30 minutes until golden, turning halfway through.

Melt butter in skillet over medium heat. Cook garlic 1-2 minutes until fragrant.

Add cream, simmer 3-4 minutes until thickened. Remove from heat, stir in Parmesan until smooth.

Pour sauce over roasted potatoes. Garnish with parsley.
