Effortless Chicken Curry Sauce (Print Version)

# Ingredients:

01 - 600g chicken breast, fresh and whole.
02 - 100g diced bacon, not too lean.
03 - 2 tsp extra virgin olive oil.
04 - 3 tsp curry powder.
05 - Sea salt, just enough.
06 - Cracked black pepper, to taste.
07 - 1 fresh onion.
08 - 1 garlic clove.
09 - 250ml vegetable stock.
10 - 100g crème fraîche.
11 - 200g heavy cream.
12 - 200g whole milk.
13 - 2 tbsp tomato paste.
14 - 2 tsp mild mustard.
15 - 1 tbsp chopped fresh parsley.
16 - A pinch of regular sugar.
17 - 1 tbsp cornstarch.

# Instructions:

01 - Chop up the onion and garlic into little cubes. Slice the chicken into bite-sized pieces. Toss them with a teaspoon of curry, a splash of oil, salt, and some pepper. Let it sit a minute.
02 - Start by frying the bacon bits in a skillet till they’re golden. Add the chicken and cook it a bit. Throw in the onion and garlic after that.
03 - Splash in the stock. Tip in the cream, milk, crème fraîche, tomato paste, mustard, and your spices. Stir it all together.
04 - Let everything simmer a short while. If it needs thickening, swirl some water-mixed cornstarch and pour it in. Sprinkle fresh parsley over the top before serving.

# Notes:

01 - If you want, swap cream for coconut milk.
02 - Goes great with rice, pasta, or potatoes.
03 - Toss in your favorite veggies if you like.
