Crispy Baked Turkey Tacos (Print Version)

# Ingredients:

→ Creamy Avocado Sauce

01 - 1/2 medium avocado
02 - 1/4 cup sour cream
03 - 1 tbsp fresh lemon or lime juice
04 - 1/4 cup packed cilantro leaves
05 - 1/2 tsp kosher salt, plus more to taste
06 - 2 tbsp water, plus more as needed

→ Ground Turkey and Black Bean Filling

07 - 2 tsp avocado oil or olive oil
08 - 8 oz lean ground turkey
09 - 2 1/2 tsp homemade taco seasoning
10 - 1/3 cup chopped yellow or white onion
11 - 3/4 cup canned black beans, drained, not rinsed
12 - 4 oz green chiles
13 - 2 tbsp finely chopped cilantro

→ Homemade Taco Seasoning

14 - 1/2 tsp cumin
15 - 1/2 tsp Mexican oregano or Italian oregano
16 - 1/2 tsp garlic powder
17 - 1/2 tsp kosher salt
18 - 1/4 tsp smoked paprika
19 - 1/4 tsp chili powder
20 - 1/8 tsp cayenne pepper (optional)

→ Tacos

21 - Cooking spray or avocado oil, for brushing
22 - 6 fajita-sized flour tortillas (6")
23 - 1 1/2 cups shredded Monterey Jack cheese

# Instructions:

01 - Combine avocado, sour cream, lime juice, cilantro, salt, and water in a food processor. Blend until smooth, adding water if needed. Taste and adjust seasoning. Cover and refrigerate.
02 - Heat oil in a large non-stick pan on medium. Add ground turkey, half the taco seasoning, and onion. Cook, breaking the turkey into pieces, for 4-5 minutes until browned.
03 - Stir in black beans, green chiles, remaining taco seasoning, water, and cilantro. Mix and simmer on medium-low, uncovered, for 15 minutes. Stir and cook further if excess liquid remains. Remove from heat.
04 - Preheat oven to 425°F. Spray or brush a rimmed baking sheet with oil. Lay tortillas on the sheet, overlapping slightly. Spread 1/4 cup of cheese over each tortilla and spoon 1/4-1/3 cup of filling onto one side of each tortilla.
05 - Bake for 1-2 minutes to melt the cheese. Fold tortillas in half, brush tops with oil, and bake for 10-12 minutes until golden and crispy.
06 - Serve tacos with the creamy avocado sauce on the side. Enjoy!

# Notes:

01 - Flour tortillas work best because they fold without breaking. Corn tortillas may crack more easily.
02 - Adjust salt levels if using different brands of kosher or sea salt.
