Crispy Beef Cheesy Chimichangas (Print Version)

# Ingredients:

01 - 1 lb ground beef
02 - 1 small onion, chopped
03 - 2 cloves garlic, minced
04 - 1 teaspoon ground cumin
05 - 1 teaspoon chili powder
06 - 1/2 teaspoon paprika
07 - 1 teaspoon salt
08 - 1/4 teaspoon black pepper
09 - 1/2 cup salsa or diced tomatoes
10 - 1 cup shredded cheddar cheese or Mexican blend
11 - 6 large flour tortillas
12 - 2 tablespoons oil for brushing or frying

13 - Fresh cilantro

15 - Salsa
16 - Tomatoes
17 - Guacamole

# Instructions:

01 - In a large skillet over medium heat, cook the ground beef and onion until browned, about 5-7 minutes. Drain excess grease and add garlic, cumin, chili powder, paprika, salt, and black pepper. Cook for another 1-2 minutes.
02 - Stir in the salsa or diced tomatoes and cook until thickened. Remove from heat and let it cool slightly.
03 - Warm the tortillas slightly to make them pliable by heating for 10-15 seconds in the microwave.
04 - Place about 1/4 cup of the beef mixture in the center of each tortilla. Sprinkle with shredded cheese. Fold the sides in, then roll the tortilla tightly to form a burrito shape.
05 - Heat 2 tablespoons of oil in a skillet over medium heat. Place the chimichangas seam-side down and cook for 2-3 minutes per side until golden and crispy.
