Thoroughly wash the potatoes and cook them with their skins on in a pot of boiling salted water for about 15 minutes until tender. Alternatively, you can use leftover boiled potatoes from the previous day to save time on this step.

Preheat the oven to 400°F (200°C) conventional heat. Line a baking sheet with parchment paper.

Place the cooked potatoes (with skins) on the prepared baking sheet and carefully flatten each one using a potato masher or the bottom of a bottle. The potatoes should be flattened but not completely broken apart.

Brush or spray the flattened potatoes with olive oil. Then generously season them with salt, pepper, and paprika powder.

Bake the prepared potatoes in the preheated oven for 25-30 minutes until they're golden brown and crispy around the edges.
