Cook potatoes in an air fryer at 400°F for 18-20 minutes, shaking the basket 2-3 times during cooking.

Brown and crumble 1 pound ground beef in a pan. Drain excess grease, then add 1 packet taco seasoning and the directed amount of water. Cook following the instructions on the seasoning packet, then remove from heat.

Layer cooked potatoes on a serving platter, top with seasoned ground beef, and sprinkle with Mexican shredded cheese. Add optional toppings such as pico de gallo, guacamole, or sour cream as desired.
