Creamy Zesty Crock Pot Dish (Print Version)

01 - 2 lbs boneless, skinless chicken breasts
02 - 1 cup yellow onion, diced
03 - 1 packet ranch seasoning mix
04 - 1 tbsp taco seasoning
05 - 1 (15 oz) can black beans, drained and rinsed
06 - 1 (15 oz) can whole-kernel corn, not drained
07 - 1 (14.5 oz) can diced tomatoes, not drained
08 - 1 (4 oz) can diced green chilies, drained
09 - 1 tsp black pepper
10 - 2 tsp garlic, minced
11 - 8 oz cream cheese

# Instructions:

01 - Add the diced onion to the bottom of a 6-quart crock pot, then place the chicken breasts on top.
02 - Sprinkle ranch seasoning and taco seasoning over the chicken. Layer the black beans, corn, diced tomatoes, green chilies, black pepper, and minced garlic over the chicken. Place the cream cheese on top.
03 - Cover the crock pot and cook on high for 2-3 hours or on low for 4-6 hours until the chicken is fully cooked and tender.
04 - Shred the chicken in the crock pot using two forks and mix everything thoroughly until well combined.
05 - Serve the dish over rice, with tortillas, or on top of nachos as desired.

# Notes:

01 - Choose chicken breasts of similar size for even cooking.
02 - For an extra kick of heat, substitute canned green chilies with diced fresh jalapeños or Chipotle peppers in Adobo sauce.
03 - Use a hand mixer on low speed to shred the chicken quickly.
