Crock Pot Meatloaf Glaze (Print Version)

# Ingredients:

→ Meatloaf

01 - 1 small sweet onion, peeled and grated
02 - 1 cup whole milk
03 - 2 large eggs, lightly beaten
04 - 2 tablespoons light brown sugar, packed
05 - 1 tablespoon ketchup
06 - 1 tablespoon bbq sauce
07 - 1 tablespoon Worcestershire sauce
08 - 1 tablespoon garlic powder
09 - 1 teaspoon kosher salt
10 - 1/2 teaspoon black pepper
11 - 1 cup plain panko breadcrumbs
12 - 2 pounds ground beef (85/15)

→ Glaze

13 - 1/2 cup ketchup
14 - 1/2 cup bbq sauce
15 - 1/4 cup light brown sugar, packed
16 - Fresh chopped parsley for garnish (optional)

# Instructions:

01 - Line the crock pot with a large piece of heavy-duty foil, spray with cooking spray, and set aside.
02 - In a large bowl, add onion, milk, eggs, brown sugar, ketchup, bbq sauce, Worcestershire sauce, garlic powder, salt, and pepper. Whisk until fully combined.
03 - Add panko breadcrumbs to the mixture. Stir until mixed well.
04 - Add ground beef and mix everything with clean hands until just combined, being careful not to overmix.
05 - Place the mixture into the foil-lined crock pot and form it into a long oval shape. Set aside.
06 - In a small bowl, mix ketchup, bbq sauce, and brown sugar until combined.
07 - Brush half of the glaze on the meatloaf. Cook on low for 6 hours or until the internal temperature reaches at least 165°F.
08 - Remove the meatloaf from the crock pot using the foil to lift it out. Place on a sheet tray, brush with the remaining glaze, and optionally broil until bubbly and slightly browned. Garnish with parsley and serve.
