Once they've cooled off, drizzle some melted chocolate on top if you feel like it.

Slide your trays into the oven, set to 160°C convection. Bake for about 14 minutes, right in the middle rack.

Scoop up a bit of dough, about the size of a walnut, and drop it onto a baking sheet lined with parchment.

Leave your dough for half an hour so the oats get nice and soft.

Toss in sugar, vanilla sugar, egg, and pieces of butter. Knead until it comes together. Mix in oats and walnuts last.

Grab a mixing bowl and combine flour, cinnamon, and baking powder.

Pop the walnuts into your mini food chopper and grind them up fine.
