Spices That Pop

Crush cumin and coriander seeds in a mortar by hand for deeper smell and taste. They'll beat pre-ground stuff any day.

Cozy Vibes

Come home to creamy coconut milk and bold spices that take the chill off a cold day. Grab a spoon of curry and winter suddenly feels pretty nice.

Handy Tips

Brown the onions slowly to get all their natural sweetness out. If you keep the cauliflower bits small, they’ll cook evenly and soak up more sauce.

Switch It Up

Throw in some bell pepper, spinach, or sweet potatoes if you fancy. For an extra kick of protein, add lentils or chickpeas. Skipping cream? Just use more coconut milk instead.

Sides to Try

If you’re not feeling rice or naan, quinoa or glass noodles work just as well. Potatoes cooked right in the curry will fill you up too.

Smart Storing

Leftovers? Keep it in the fridge for up to four days. Pop portions in the freezer and heat them up any time you want a quick meal.

Coconut Milk Magic

Coconut milk makes the sauce extra smooth and keeps things mellow. It's naturally lactose-free and really brings all the spices together.

Works for Everyone

This one fits into any meal plan—it’s plant-based, dairy-free, and vegetarian. And because the ingredients are simple, it’s easy for busy days.

Frequently Asked Questions

→ What's Garam Masala?

A blend of Indian ground spices that pumps up curry flavor right at the end.

→ Can I swap coconut milk with regular milk?

Coconut milk makes things creamy and gives that classic taste. Regular milk will make it totally different.

→ Do I have to use a mortar and pestle?

Grinding spices with it boosts their flavor a lot. If you don't have one, just chop things super fine and mash them well.

→ Is ghee a must?

Ghee changes up the flavor in a classic way. Oil is fine if that's what you have, but it'll taste a bit different.

→ How spicy will it get?

Most of the heat is from green chili. If you want it milder, take the seeds out.
