Easy Saucy Ramen Noodles (Print Version)

# Ingredients:

→ Noodles

01 - 2 servings dry instant ramen noodle cakes or other noodles of choice (around 140 g total)

→ For Sautéing

02 - 10 oz extra firm tofu, veggies, or mushrooms of choice, sliced

→ Sauce

03 - 1 cup water or vegetable broth
04 - 5-7 tbsp soy sauce (adjust to taste)
05 - 1.5 tsp dark soy sauce (optional for color)
06 - 2-3 tbsp corn starch
07 - 1-3 tbsp sugar, maple syrup, or other liquid sweetener (adjust to desired sweetness)
08 - 2 tbsp rice vinegar, white vinegar, or lemon juice (adjust to desired sourness)
09 - 1/4 tsp ground pepper
10 - 1/2 tbsp chili garlic sauce or other hot sauce (optional for spice)
11 - 1 tbsp sesame oil
12 - 2 cloves garlic, minced (optional)

→ For Serving

13 - Chopped scallions for topping
14 - Sesame seeds for topping

# Instructions:

01 - Mix all the sauce ingredients until well incorporated. Adjust sweetness, saltiness, sourness, and spice as desired. Set aside.
02 - Boil water in a small pot over high heat. Add the noodles and half-cook until still chewy. Drain the water and set the noodles aside. Optionally, run them through cold water to stop further cooking and remove excess starch.
03 - While the noodles are cooking, heat a pan over medium-high heat and add oil. Sauté chopped vegetables, mushrooms, or tofu for a few minutes until cooked to your liking.
04 - Stir the prepared sauce again to ensure the starch is not stuck at the bottom. Pour the sauce into the pan and simmer for 2-3 minutes over medium heat until thickened. Stir continuously to prevent sticking.
05 - Add the noodles to the pan with the sauce. Mix well to coat. Cook over medium-high heat for about 3 minutes or until the noodles absorb some of the sauce and it is thickened.
06 - Taste and adjust seasoning with more soy sauce, sweetener, or pepper if needed. Garnish with sesame seeds and spring onions before serving. Serve immediately while hot.

01 - If planning to use more vegetables or noodles, double the sauce recipe to ensure the dish remains saucy.
