Easy Taco Tater Tot Casserole (Print Version)

# Ingredients:

01 - 1 pound ground beef
02 - 1 cup finely chopped onion
03 - 1/2 teaspoon minced garlic
04 - 4 ounce can diced green chiles
05 - 1 ounce package taco seasoning mix
06 - 1/2 cup salsa
07 - 15 ounce can black beans, rinsed and drained
08 - 15.25 ounce can whole kernel corn
09 - 3 cups (12 oz) shredded cheddar cheese
10 - 28 ounce frozen tater tots
11 - 1 1/4 cups (10 oz) red enchilada sauce
12 - Cilantro (optional)
13 - Sour cream (optional)
14 - Avocado (optional)
15 - Tomatoes (optional)

# Instructions:

01 - Preheat oven to 375 degrees Fahrenheit.
02 - Add the ground beef and onion to a large skillet and cook until browned and cooked through. Add the garlic towards the end of browning and cook for another minute. Drain any excess fat.
03 - Add the green chiles, taco seasoning mix, salsa, black beans, corn, and 2 cups of the cheese. Stir together to combine. If your skillet isn’t large enough, transfer the mixture to a casserole dish for combining.
04 - Pour the mixture into a 9×13 inch casserole dish. Arrange frozen tater tots on top in a single layer.
05 - Pour the enchilada sauce evenly over the top of the casserole.
06 - Bake uncovered for 30–40 minutes or until the tater tots are crispy.
07 - Sprinkle the remaining 1 cup of cheese on top and bake for another 2–3 minutes or until the cheese has melted.
08 - Serve hot with optional toppings such as cilantro, sour cream, avocado, and tomatoes.
