Preheat oven to 350°F (180°C) conventional heat. Remove the core from the endives. Place the endives in a pot of boiling, salted water and pre-cook over medium heat for 5 minutes, then drain well and pat dry.

Wrap each endive in a slice of ham and arrange them in a baking dish.

Mix the cooking cream and Parmesan cheese, then season with salt and pepper.

Pour the sauce over the wrapped endives. Sprinkle with the grated cheese and bake for 20 minutes until golden and bubbly.
