Preheat oven to 390°F (200°C) fan setting. Line a baking sheet with parchment paper and arrange the seasoned potato slices in a single layer, avoiding overlap if possible. Bake for 25 minutes until the potatoes begin to soften and turn golden at the edges.

Remove the baking sheet from the oven, scatter the diced onions evenly over the potatoes, and return to the oven for another 10 minutes. The potatoes should be golden brown and crispy at the edges, with the onions softened and slightly caramelized. Before serving, sprinkle with freshly chopped parsley.
