Line a 9x13-inch baking dish or rimmed sheet tray with parchment paper.

In a medium bowl, blend the Greek yogurt with the maple syrup and vanilla extract until well combined.

Pour the yogurt mixture onto the prepared baking sheet and spread it evenly to about 1/4 inch thick. Sprinkle the sliced strawberries, blueberries, granola, coconut flakes, and chocolate chips evenly over the top. Press very gently so it all sticks.

Place the baking sheet in the freezer for at least 3 hours, or until the yogurt is firm. For best results, freeze overnight.

Once frozen, remove the baking sheet from the freezer. Break the yogurt bark into pieces using your hands or cut it with a sharp knife. Enjoy!
