Fudgy Chocolate Brownie Cookies (Printer-Friendly Version)

# What You'll Need:

→ Dry Ingredients

01 - 95g (¾ cup) plain flour
02 - 2 tablespoons cocoa powder
03 - 1 teaspoon baking powder
04 - ¼ teaspoon salt

→ Chocolate and Butter

05 - 225g (1¼ cups) dark chocolate, chopped
06 - 56g (¼ cup) butter
07 - 85g (½ cup) dark or milk chocolate chips

→ Wet Ingredients

08 - 2 eggs, room temperature
09 - 100g (¾ cup) caster sugar
10 - 90g (½ cup) demerara sugar
11 - 1 teaspoon vanilla

# Let's Cook!:

01 - Heat oven to 160°C fan/170°C conventional. Line baking tray with parchment.
02 - Melt chocolate and butter over simmering water until smooth. Stir in vanilla.
03 - Whisk eggs and sugars until light and fluffy with electric mixer.
04 - Fold melted chocolate into egg mixture, then gently fold in sifted dry ingredients and chips.
05 - Scoop onto tray, bake 12-14 minutes until crackly on top. Cool 10 minutes on tray.
