02 - 1 pound Yukon gold potatoes, cut into 1/2 inch cubes
03 - 1/4 cup ghee or butter, divided

05 - 3 garlic cloves, minced
06 - 1 teaspoon dried thyme
07 - 1/2 teaspoon dried oregano
08 - 1/2 teaspoon sea salt, plus more to taste
09 - 1/4 teaspoon ground black pepper, plus more to taste
10 - Fresh parsley, chopped (for garnish)

# Let's Cook!:

01 - Heat a large cast iron skillet over medium heat. Add olive oil and 2 tablespoons ghee.
