In a large pot, boil salted water. Add penne and cook until al dente according to package instructions. Drain and set aside.

Pat steak bites dry and season with salt, black pepper, garlic powder, smoked paprika, and thyme. In a skillet, heat olive oil over medium-high heat. Cook steak in batches if necessary, searing each piece for 2-3 minutes per side until browned.

Reduce skillet heat to medium. Add butter and minced garlic to the steak bites, stirring to coat. Once combined, remove skillet from heat and set aside.

In a saucepan over medium heat, melt butter. Stir in heavy cream and bring to a low simmer. Gradually add Pepper Jack, cheddar, and Parmesan cheeses, stirring until smooth.

Add smoked paprika, garlic powder, salt, and black pepper to the cheese sauce. Mix well, then fold in cooked penne until fully coated.

Plate pasta and top with garlic butter steak bites. Garnish as desired with fresh herbs or Parmesan.
