Pat chicken thighs dry with a paper towel and sprinkle the seasoning mix evenly over both sides of the chicken.

Heat the oil in a 12-inch skillet over medium-high heat. Place chicken thighs in the hot skillet and sear for 7-8 minutes on one side. Flip and cook for another 7-8 minutes until chicken reaches an internal temperature of 165°F and juices run clear. Remove chicken from skillet and keep warm.

Add butter to the skillet. Once melted, add the sliced mushrooms and season lightly with salt and pepper. Saute for 3 minutes, then add minced garlic and cook until fragrant, about 1 more minute.

Return the chicken to the skillet and warm through. Garnish with freshly chopped parsley before serving.
