Garlic Mushroom Chicken Thighs (Print Version)

# Ingredients:

→ Chicken and Seasoning

01 - 1 1/2 pounds boneless skinless chicken thighs (approximately 6 large thighs)
02 - 1 teaspoon onion powder
03 - 1 teaspoon garlic powder
04 - 1 teaspoon paprika
05 - 1 teaspoon salt
06 - 1/2 teaspoon black pepper
07 - 1/2 teaspoon red pepper flakes

→ Cooking Base

08 - 2 tablespoons olive oil or coconut oil

→ Sauce and Garnish

09 - 8 ounces sliced mushrooms (cremini recommended)
10 - 3 tablespoons butter
11 - 4 cloves garlic, minced

# Instructions:

01 - In a small bowl, combine the onion powder, garlic powder, paprika, salt, black pepper, and red pepper flakes.
02 - Pat chicken thighs dry with a paper towel and sprinkle the seasoning mix evenly over both sides of the chicken.
03 - Heat the oil in a 12-inch skillet over medium-high heat. Place chicken thighs in the hot skillet and sear for 7-8 minutes on one side. Flip and cook for another 7-8 minutes until chicken reaches an internal temperature of 165°F and juices run clear. Remove chicken from skillet and keep warm.
04 - Add butter to the skillet. Once melted, add the sliced mushrooms and season lightly with salt and pepper. Saute for 3 minutes, then add minced garlic and cook until fragrant, about 1 more minute.
05 - Return the chicken to the skillet and warm through. Garnish with freshly chopped parsley before serving.

01 - Cooking time may vary depending on the size and thickness of your chicken thighs; use a meat thermometer to ensure a safe internal temperature of 165°F.
02 - Boneless chicken breasts can be used if sliced thinner, or chicken tenders as an alternative.
