Soak wooden skewers in water for at least 30 minutes to prevent burning.

Combine chicken seasoning mixture in a small bowl. Cut chicken into 3-inch pieces, place in a large bowl or zip-top bag, add olive oil and spices, and coat evenly.

Pack chicken pieces tightly onto each skewer with no spaces. Trim skewers if necessary to fit in your air fryer.

Melt butter and garlic in a microwave-safe bowl. Add red pepper flakes, hot sauce, parsley, and parmesan, whisking until combined. Reserve one-third of the sauce for basting cooked chicken.

Cook 2-3 skewers at a time at 400°F for 5 minutes. Flip, baste with sauce, cook for an additional 2 minutes. Flip, baste again, and cook 5-6 minutes more until internal temperature reaches 165°F.

Brush cooked chicken with reserved sauce, sprinkle with extra parmesan, and serve immediately.
