Grilled Cheese Sausage Egg (Print Version)

01 - 1 pound pork breakfast sausage
02 - 18 large eggs, divided
03 - 4 tablespoons butter, divided
04 - 1 cup whole milk, divided
05 - 1/4 teaspoon kosher salt
06 - 1/2 teaspoon coarse ground black pepper
07 - 1/2 teaspoon ground mustard
08 - 12 slices Texas toast
09 - 12 slices American cheese

# Instructions:

01 - Preheat oven to 375°F (190°C).
02 - Cook the breakfast sausage in a large pan on medium-high heat for 4-5 minutes or until browned well, breaking it apart as you cook. Remove the sausage and drain the fat.
03 - Add 1 tablespoon of butter to the pan on medium heat. Whisk 10 eggs with 1/4 cup of milk, salt, and pepper, then pour the mixture into the pan. Scramble the eggs until just set.
04 - In a 9x13 pan, arrange 6 slices of Texas toast on the bottom. Top each slice with a piece of cheese.
05 - Layer the cooked sausage over the bread and cheese, followed by the scrambled eggs. Place another slice of cheese on top of the eggs.
06 - In a medium bowl, whisk together the remaining 8 eggs, 3/4 cup milk, and ground mustard. Pour this mixture gently over the layered ingredients in the pan.
07 - Top with the remaining 6 slices of Texas toast. Melt the remaining 3 tablespoons of butter and brush it onto the tops of the bread.
08 - Cover the pan with foil and bake for 20 minutes.
09 - Remove the foil and bake for an additional 20 minutes, or until the bread is golden and the casserole is set.
