Preheat oven to 375°F (190°C).

Cook the breakfast sausage in a large pan on medium-high heat for 4-5 minutes or until browned well, breaking it apart as you cook. Remove the sausage and drain the fat.

Add 1 tablespoon of butter to the pan on medium heat. Whisk 10 eggs with 1/4 cup of milk, salt, and pepper, then pour the mixture into the pan. Scramble the eggs until just set.

In a 9x13 pan, arrange 6 slices of Texas toast on the bottom. Top each slice with a piece of cheese.

Layer the cooked sausage over the bread and cheese, followed by the scrambled eggs. Place another slice of cheese on top of the eggs.

In a medium bowl, whisk together the remaining 8 eggs, 3/4 cup milk, and ground mustard. Pour this mixture gently over the layered ingredients in the pan.

Top with the remaining 6 slices of Texas toast. Melt the remaining 3 tablespoons of butter and brush it onto the tops of the bread.

Cover the pan with foil and bake for 20 minutes.

Remove the foil and bake for an additional 20 minutes, or until the bread is golden and the casserole is set.
