Grilled Chicken Avocado Caesar (Print Version)

# Ingredients:

01 - 6 chicken tenders or 2 boneless skinless chicken breasts
02 - 2 tablespoons olive oil
03 - 1 teaspoon Kosher salt
04 - 1/2 teaspoon freshly ground pepper
05 - 6 strips bacon, cooked and cut into pieces
06 - 6 cups Romaine lettuce, chopped
07 - 1 1/2 cups cherry tomatoes, halved
08 - 2-3 hard-boiled eggs, sliced
09 - 1 avocado, thinly sliced
10 - Parmesan cheese, shaved
11 - 2 cups croutons

→ Caesar Dressing

12 - 1 cup mayonnaise (e.g., Best Foods or Hellmann's)
13 - 2 small garlic cloves, minced
14 - 1 1/2 teaspoons anchovy paste
15 - 2 tablespoons freshly squeezed lemon juice
16 - 1 teaspoon Dijon mustard
17 - 1 tablespoon Worcestershire sauce
18 - 1/2 cup freshly grated Parmesan cheese
19 - 1/4 teaspoon salt
20 - 1/4 teaspoon freshly ground black pepper
21 - 1/4 cup olive oil

# Instructions:

01 - In a small bowl, combine the mayonnaise, minced garlic, anchovy paste, lemon juice, Dijon mustard, Worcestershire sauce, Parmesan cheese, salt, pepper, and olive oil. Mix until smooth. Set aside.
02 - Preheat a grill to medium-high heat. Rub olive oil on the chicken, then season with salt and pepper. Grill the chicken for about 5 minutes per side or until fully cooked. Let the chicken rest for 5 minutes, then slice.
03 - In a large bowl, layer the chopped romaine lettuce. Top with the sliced chicken, bacon pieces, halved cherry tomatoes, sliced avocado, and sliced hard-boiled eggs.
04 - Drizzle with Caesar dressing, sprinkle croutons and shaved Parmesan on top, and add fresh ground pepper to taste. If a thinner dressing is desired, add 1 tablespoon of water at a time to the dressing until the desired consistency is achieved.
