01 -
Preheat the oven to 375°F and spray a 13” x 9” casserole dish with cooking spray.
02 -
Heat the avocado oil in a large skillet over medium-high heat. Add the diced onion and sauté until softened, about 3 to 5 minutes. Add the ground turkey to the skillet and use a spatula to chop it into bite-sized bits. Cook until most of the pink is gone. Sprinkle lightly with sea salt.
03 -
In the prepared casserole dish, mix the chopped bell pepper, minced garlic, chili powder, chicken broth, salsa, uncooked white rice, drained black beans, green chilis, and sea salt until combined.
04 -
Add the cooked onion and turkey mixture to the baking dish and stir to combine. Sprinkle grated cheese on top.
05 -
Cover the dish with aluminum foil and bake in the oven for 45 minutes.
06 -
Remove the baking dish from the oven and remove the foil. Set the oven on High Broil and broil the casserole for 5 to 8 minutes, or until the cheese is bubbly and slightly golden brown.
07 -
Serve the casserole with your choice of toppings, such as sliced avocado, guacamole, black olives, corn chips, sour cream, salsa, shredded lettuce, chopped tomatoes, black olives, pico de gallo, or extra shredded cheese.
