Preheat oven to 350 degrees Fahrenheit. Line a sheet pan with parchment paper and set aside.

Mix together honey, dijon mustard, granulated garlic, and a pinch of salt and pepper in a small bowl. Set aside.

In a separate bowl, whisk 1 egg with 1 tablespoon of whole milk. Set aside.

Place a piece of parchment paper on a cutting board. Unroll the puff pastry dough. Spread the honey mustard mixture evenly, followed by gruyere cheese, and then lay ham slices on top.

Tightly roll the puff pastry dough, using the parchment paper to help hold it tightly. Pinch the seams to seal. Using a sharp knife, cut the roll into 3/4-inch slices.

Place each pinwheel slice on the parchment-lined sheet pan and brush with the egg wash. Bake for 15-20 minutes, or until golden brown.
