→ Main Ingredients

01 - 4 boneless chicken thighs
02 - 2 teaspoons olive oil
03 - 3 tablespoons harissa powder
04 - 1 teaspoon smoked paprika
05 - ½ teaspoon cumin
06 - ¼ teaspoon cayenne pepper
07 - 1 tablespoon lemon juice

# Instructions:

01 - Mix the olive oil, harissa powder, lemon juice, smoked paprika, cumin, and cayenne pepper in a small bowl to form a thick paste.
02 - Rub the paste all over the chicken thighs or place the paste and chicken in a large bowl or sealable bag. Shake or roll it around to ensure the chicken is evenly coated.
03 - Allow the chicken to marinate for at least one hour or more for enhanced flavor.
04 - Preheat the oven to 220°C (425°F).
05 - Line a baking tray or rimmed baking sheet with aluminum foil or parchment paper. Arrange the chicken in a single layer on the tray.
06 - Bake the chicken in the preheated oven for 18-20 minutes. Check for doneness using a meat thermometer; the internal temperature should reach at least 74°C (165°F).
07 - Let the chicken rest for five minutes to reabsorb its juices before serving.

# Notes:

01 - Harissa is made from hot chili peppers, but you can adjust the spice level by varying the amount of harissa powder or paste used.
02 - Marinating the chicken for two to four hours or longer will enhance the flavor.
03 - Allow the chicken to rest for five minutes after baking to ensure it remains juicy.
04 - Harissa paste stores well in the freezer for a few months if prepared in bulk.
