Hawaiian Chicken Grilled Skewers (Print Version)

# Ingredients:

→ Marinade

01 - ½ cup barbecue sauce
02 - ⅓ cup soy sauce
03 - ⅓ cup honey
04 - 1 tablespoon sriracha
05 - 2 teaspoons sesame oil
06 - 2 cloves garlic, minced
07 - 1 tablespoon fresh ginger, minced
08 - 1 teaspoon kosher salt
09 - 1 teaspoon pepper

→ Kebabs

10 - 2 chicken breasts, cut into 1-inch pieces
11 - 2 cups cubed pineapple
12 - 1 red onion, quartered, layers separated
13 - 3 bell peppers, red, orange, and yellow, cubed
14 - Grilling skewers

# Instructions:

01 - If using wooden skewers, soak them in water for 1 hour before using to prevent burning.
02 - Preheat grill to medium heat (about 425°F).
03 - In a large bowl, whisk together barbecue sauce, soy sauce, honey, sriracha, sesame oil, garlic, ginger, salt, and pepper until completely combined. Remove ½ cup of the mixture and place in an airtight container for basting.
04 - Add chicken to the remaining marinade, combine, cover, and chill for 30 minutes to 2 hours.
05 - Once marinated, assemble skewers by alternating chicken, pineapple, bell peppers, and red onion.
06 - Place skewers on an oiled and preheated grill. Brush with reserved marinade. Cook for 5 minutes, then flip and brush with marinade on the other side. Cook for an additional 5-10 minutes or until the chicken is fully cooked.
