Homemade Sloppy Joes (Print Version)

01 - 1 tablespoon vegetable oil
02 - 1 ½ pounds lean ground beef, 90/10
03 - 1 small sweet onion, diced
04 - 1 small green bell pepper, diced
05 - 2 tablespoons tomato paste
06 - 3 cloves garlic, minced
07 - 1 teaspoon smoked paprika
08 - 1 teaspoon chili powder
09 - ⅛ teaspoon cayenne pepper
10 - 1 ½ cups beef stock
11 - 1 cup ketchup
12 - 2 tablespoons Dijon mustard
13 - 2 teaspoons Worcestershire sauce
14 - 1 tablespoon brown sugar
15 - Kosher salt, to taste
16 - Freshly ground black pepper, to taste

# Instructions:

01 - Heat vegetable oil in a large cast iron skillet over medium-high heat. Add ground beef and cook until browned, about 3-5 minutes, breaking up the meat as it cooks. Drain excess fat.
02 - Add onion and bell pepper. Cook, stirring occasionally, until tender, about 3-4 minutes.
03 - Stir in tomato paste, garlic, smoked paprika, chili powder, and cayenne pepper. Cook until fragrant, about 1 minute.
04 - Stir in beef stock, scraping any browned bits from the bottom of the skillet.
05 - Stir in ketchup, Dijon mustard, Worcestershire sauce, and brown sugar. Season with salt and pepper to taste. Bring to a boil, then reduce heat and simmer, stirring occasionally, until thickened and flavors are well blended, about 15-20 minutes.
06 - Serve immediately in hamburger buns or as desired.

01 - To freeze, let the mixture cool completely. Portion into freezer-safe plastic bags in individual servings, squeeze out excess air, and freeze flat in a single layer. Thaw and reheat over low heat, stirring occasionally, until warmed through.
