01 - 4 vanilla beans
02 - 1/3 cup (75g) fine granulated sugar
03 - 1/2 cup (100ml) water
04 - 2 teaspoons glucose syrup

# Instructions:

01 - Split the vanilla beans lengthwise and scrape out the seeds. Place the seeds in a small saucepan.
02 - Finely grind the empty vanilla bean pods with the sugar in a food processor or grinder. It's okay if some slightly coarser pieces of vanilla pod remain.
03 - Add the sugar-vanilla mixture to the saucepan with the vanilla seeds, along with the water and glucose syrup. Bring to a boil and simmer gently for about 7-8 minutes until reduced.
04 - Allow the mixture to cool slightly, then process again in the food processor until fine. Transfer the vanilla paste to a clean jar. If you prefer a smoother texture with no pieces, press the paste through a sieve.

# Notes:

01 - You can also use only empty, scraped vanilla pods. In this case, you'll need 5-6 pods, depending on their size.
02 - When stored in a well-sealed container in a dark place, the vanilla paste will keep for at least a year.
03 - Homemade vanilla paste is an excellent base for desserts, pastries, and other sweet creations.
