Split the vanilla beans lengthwise and scrape out the seeds. Place the seeds in a small saucepan.

Finely grind the empty vanilla bean pods with the sugar in a food processor or grinder. It's okay if some slightly coarser pieces of vanilla pod remain.

Add the sugar-vanilla mixture to the saucepan with the vanilla seeds, along with the water and glucose syrup. Bring to a boil and simmer gently for about 7-8 minutes until reduced.

Allow the mixture to cool slightly, then process again in the food processor until fine. Transfer the vanilla paste to a clean jar. If you prefer a smoother texture with no pieces, press the paste through a sieve.
