# Ingredients:

→ Chicken Bites

01 - 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
02 - 2 tbsp olive oil
03 - Salt, to taste
04 - Black pepper, to taste
05 - 0.5 tsp garlic powder
06 - 5 cloves garlic, minced
07 - 0.25 cup honey
08 - 2 tbsp soy sauce
09 - 1 tbsp apple cider vinegar
10 - 1 tbsp butter

→ Creamy Rice

11 - 1.5 cups jasmine or white rice
12 - 3 cups chicken broth
13 - 1 cup heavy cream
14 - 1 cup shredded mozzarella cheese
15 - 0.5 cup cream cheese, softened
16 - 0.5 cup grated Parmesan cheese
17 - 1 tbsp butter
18 - Salt, to taste
19 - Pepper, to taste
20 - 1 tsp Italian seasoning
21 - Fresh parsley, for garnish

# Instructions:

01 - In a large pot, add rice and chicken broth. Bring to a boil, then reduce heat, cover, and simmer for approximately 15 minutes or until liquid is absorbed and rice is tender.
02 - Once rice is done, stir in butter, heavy cream, cream cheese, mozzarella, and Parmesan until melted and creamy. Season with salt, pepper, and Italian seasoning. Keep warm.
03 - Heat olive oil in a large skillet over medium-high heat. Season chicken with salt, pepper, and garlic powder. Sear the chicken until golden and fully cooked, about 12-15 minutes.
04 - Push the chicken to the sides of the skillet and add butter and minced garlic. Sauté garlic for 30 seconds, then pour in honey, soy sauce, and apple cider vinegar. Simmer for 2-3 minutes until thick and sticky, coating the chicken.
05 - Spoon the creamy rice onto plates and top with the honey garlic chicken bites. Garnish with fresh parsley before serving.
