Jalapeno Pepper Jack Chicken (Print Version)

# Ingredients:

→ Burger Patties

01 - 2 lbs ground chicken
02 - 4 garlic cloves, minced
03 - 1/2 onion, finely diced
04 - 1-2 jalapeno peppers, seeded and finely diced
05 - 2 teaspoons paprika
06 - 1 teaspoon kosher salt
07 - 1/2 teaspoon freshly ground black pepper
08 - 3/4 cup shredded pepper jack cheese
09 - 1/2 cup chopped fresh cilantro
10 - Vegetable or olive oil for grilling
11 - 8 slices of cheese (optional, use American or white cheddar)
12 - 8 hamburger buns

→ Roasted Garlic Mayo

13 - 1 head roasted garlic
14 - 1/3 cup mayonnaise
15 - Salt and pepper to taste

→ Guacamole

16 - 2 large avocados
17 - Juice of 1 lime
18 - 2 tablespoons cilantro, finely chopped
19 - Salt and pepper to taste

# Instructions:

01 - In a small bowl, mix roasted garlic and mayonnaise until combined. Add salt and pepper to taste. Cover and store in the refrigerator until ready to use.
02 - Preheat the grill to medium-high heat.
03 - In a mixing bowl, combine ground chicken, minced garlic, onion, jalapeno peppers, paprika, salt, pepper, shredded pepper jack cheese, and cilantro. Gently mix until combined. Divide the mixture into 8 equal patties.
04 - Lightly coat the grill grate with vegetable oil using a paper towel.
05 - Grill patties covered over direct heat for 8 minutes on each side or until they reach an internal temperature of 165°F. If desired, add cheese slices during the last few minutes of grilling.
06 - Serve patties on toasted hamburger buns with your favorite toppings and the prepared roasted garlic mayo.
07 - Place an entire head of garlic onto a piece of foil. Drizzle with 1 teaspoon olive oil, wrap in the foil, and roast in an oven preheated to 400°F for 40 minutes or until soft. Squeeze roasted garlic out of the skin and mash.
08 - Cut avocados in half, remove the seeds, and scoop the flesh into a bowl. Mash with a fork, then mix in lime juice, chopped cilantro, and salt and pepper.

# Notes:

01 - For a variation, substitute ground turkey for ground chicken.
02 - Store leftover roasted garlic mayo in the refrigerator for up to 5 days.
03 - You can also roast garlic in an air fryer following the same instructions.
04 - For frying, use 1-2 tablespoons of olive oil in a hot skillet, cook patties for 7-8 minutes per side, then add cheese and cover to melt.
